Tapas Cheesy Potato Bites

Ingredients
- 2 lbs baby potatoes
- 1 tsp chipotle powder
- 2 tbsp extra virgin olive oil
- 4 oz Andrew & Everett Grated Parmesan Cheese , to taste
- 1 package (8 oz) Andrew & Everett Shredded Mexican Blend Cheese
- 2 tbsp finely chopped cilantro
- sea salt
Instructions
- Preheat oven to 450°F.
- Clean potatoes and dry them.
- Slice potatoes halfway through 1/8 inch apart, creating fan
- Toss potatoes in olive oil, salt, cilantro and chipotle powder until completely coated.
- Spread potatoes onto large baking sheet and roast for 14 minutes until crispy and tender.
- Remove from oven, sprinkle Andrew & Everett Grated Parmesan Cheese on top of potatoes and return back to oven to bake another 4 minutes.
- While still hot on baking sheet, sprinkle Andrew & Everett Shredded Mexican Blend Cheese onto potatoes.
- Serve with lite sour cream (optional). Enjoy!
