Mini Mexican Sweet Potato Pizzas

  1. Preheat oven to 425 degrees F.
  2. Slice a sweet potato into ¼ inch disks. Toss with avocado oil, sea salt, and pepper, and bake in a single layer in for 10 min on each side.
  3. Once cooked, top each disk with salsa and a generous helping of Andrew & Everett® Shredded Mexican Cheese.
  4. Place in the oven on broil for 3-5 mins until the cheese melts.
  5. Remove, top each disc with a small slice of avocado and cilantro (optional).
