Fiesta Waffle Fry Nachos

Ingredients
- 1 20oz package waffle fries or sweet potato waffle fries, frozen
- 2 cups seasoned black beans , drained
- 2 cups Andrew & Everett® Rustic Thick Cut Shredded Fiesta Blend Cheese
- 2 scallions , thinly sliced
- 2 tbsp pickled jalapenos , optional
- 1/2 cup loosely packed cilantro
- 1 avocado , pitted and sliced
- 1/2 cup sour cream , for serving
- Pico de gallo , for serving
Instructions
- Preheat oven to 425 degrees.
- Spread the waffle fries on a rimmed baking sheet and bake, flipping halfway through, about 20-25 minutes.
- Once fries are crisp and golden remove from oven. Top with beans, Shredded Fiesta Blend Cheese, scallions, and jalapenos as desired.
- Return to oven for 5 more minutes or until cheese is melted.
- Remove and top with cilantro, avocado, and sour cream. Serve immediately with pico de gallo.
