Preheat a 10” skillet over medium/medium high heat and coat with cooking spray. Place tortilla on the preheated skillet and cover with ½ cup Andrew & Everett® Mexican Mix Shreds. Cook approximately 2 minutes or until cheese is almost melted. Fold in half and cook an additional 30 seconds. Serve hot with optional suggestions.
Optional: Add diced cooked chicken or ham, sautéed onions and peppers, pepperoni, black beans.Top with salsa, guacamole, or sour cream.
