Shrimp & Avocado Quesadilla

Ingredients
- 1 tbsp salted butter
- 2 flour or corn tortillas
- 1/4 cup Andrew & Everett Shredded Sharp Cheddar Cheese
- 5 large shrimp , peeled and deveined
- 2 tsp taco seasoning
- 1/2 avocado , sliced
Instructions
- Cut shrimp into small, bite-sized pieces.
- Heat salted butter on skillet and add shrimp and taco seasoning until shrimp are cooked and nicely coated. Remove shrimp from skillet.
- Place one tortilla onto skillet and add Andrew & Everett® Shredded Sharp Cheddar Cheese, shrimp, avocado and second tortilla.
- Cook for 2-3 minutes or until tortilla is toasted and cheese is starting to melt. Flip tortilla and repeat until cheese is fully melted and tortilla is crispy.
