Filled with leftover steak, shredded Colby Jack and tomato salsa spiked with a little spicy chipotle pepper, these tasty quesadillas make a quick and satisfying meal for lunch or dinner.

  1. Lay tortillas on work surface. Stir together salsa and chipotle. Spread over 2 tortillas; top with cheese and steak. Cap with remaining tortillas.
  2. Heat half of the oil in large skillet set over medium heat; cook quesadillas in 2 batches, turning once, for 4 to 6 minutes or until golden brown and crisp, adding remaining oil as needed.
  3. Cut into wedges and serve with guacamole for dipping.
Tips:
  1. Substitute pulled pork or chicken for steak if desired.
  2. Also, delicious served with sour cream for dipping.
